Unless you have a large number of jellybeans, I'd suggest waiting on increasing your stats until you are pretty sure you know *which* guardians you want to spend them on. If you look at the "Guardians" tab, above, you can see that there are multiple fire/water/nature/normal (and later, rock and air) guardians, and you are likely to (eventually) capture all of them. If you use up all your jellybeans upgrading your starter guardians, you may later wish you had saved some of them for the guardians you capture later in the game.

That said, you'd never want to increase special damage on a normal guardian (that has no special attack), but you definitely can increase special defense. I think you're probably better off focusing on special attack (on your elemental guardians) and regular attack on your normal guardians.
