There is a little plus sign next to your Monkey Bucks total - you can click that to buy more Monkey Bucks. Once you have some of those, you can go into any unlocked stage in any monkey and click the yellow "Get more Hammers" button to access the dialog where you can spend Monkey Bucks on some non-expiring hammers.
